Kif, meta u għalfejn oriġinat ix-xalata tal-Festa ta’ San Publju?
Nafu fi żgur li x-xalata tal-Floriana tmur lura għexieren ta’ snin u ġa kienet issir mill-anqas sa minn madwar l-1915.
F’dak iż-żmien il-Floriana kienet post industrijali ħafna u kien hemm ħafna ħwienet tas-snajja. Eqreb ma kienet tersaq il-Festa, aktar kienet tinħass il-ħtieġa tas-sahra u l-imgħallmin u l-lavranti tagħhom kienu kollha jistinkaw ħalli jlestu x-xogħol mistenni minnhom sa lejlet il-Festa. Il-Floriana kienet nieqa ta’ ħidma; kulħadd fuq xogħlu, kulħadd jaħdem u fl-istess ħin iħares lejn il-Festa u l-għada tagħha … ix-xalata.
U kienet tkun vera xalata! Il-ħwienet tas-snajja kollha magħluqa, l-omnibusijiet u l-karozzini lesti fit-toroq u l-imgħallmin mal-lavranti jirkbu u jerħulha tlikki tlikki lejn San Pawl il-Baħar għall-fenkata u xarba nbid għand tal-Veġġa.
Imbagħad ma’ nżul ix-xemx jerġgħu jerħulha lejn il-Floriana bid-dawl inemnmu tal-fanali tal-karti mal-karozzini u l-omnibusijiet fejn marthom, ommhom u wliedhom kienu jkunu lesti biex jilqgħuhom wara ġurnata mistrieħ li tant kienet ħaqqhom għall-ħidma li kienu jwettqu matul il-ġranet tax-xitwa.
